These meringue clouds are light, crispy, and sweet. It's a wonderful addition to a light dinner or for a light dessert after a big meal. They are sure to be a hit. It does take a bit of patience to wait till they are finished in the oven but they are worth it.
Easy Meringue Fruit Clouds
Ingredients:
3 egg whites
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
3/4 cup granulated sugar
fresh fruit of your choice we used strawberries and blueberries but any fruit would work well
Directions:
Place egg whites in a large bowl; let stand at room temperature for 30 minutes.
Beat the egg whites, vanilla, and cream of tartar on medium speed until soft peaks form.
Gradually beat in sugar 1 tablespoon at a time on high until stiff peaks form.
Drop meringue into 8 mounds on a parchment paper-lined baking sheet.
Shape into bowls with the back of a spoon. Or place meringue in a pastry bag fitted with a star tip. Pipe meringue onto parchment paper to form 8 - 3" cups.
Bake at 275degrees for 45-50 minutes or until set and dry.
Turn off the oven and DO NOT OPEN DOOR; leave in for 1 hour.
Remove and cool then fill with fruit and top as you like.
