Mini Chocolate Sugar Cookie Pot's O' Gold

These are the cutest treats and they are super easy and fun to make together. It's a fun way to open up a conversation about 

St. Patrick's day and all things Irish. 

Mini Pots O' Gold 


Ingredients Pots o Gold


Ingredients: 

1 package (18 oz) Sugar Cookie Dough 

1/4 cup Dutch-processed unsweetened cocoa 

1 package (14 oz) caramels (or 11 oz caramel bits)

2 TBS Milk 

2 TBS Mini yellow candy-coated chocolate baking pieces 

2 TBS Mini orange candy-coated chocolate baking pieces 

Yellow Decorating sugar


Instructions:

Grease 36 (1 3/4 inch) mini muffin cups. Remove dough from wrapper to large bowl. Add 1/4 cup unsweetened cocoa powder to refrigerated sugar cookie dough. Beat until well blended. (You can also make sugar cookie dough from scratch and add the cocoa in the dry mix and make cookie dough as instructed on the box.)

Cut dough into 36 equal pieces; roll into balls. Place 1 ball in the bottom of each muffin cup and press dough on the bottoms and upsides of the muffin cups. Or flatten balls and press dough on bottoms and upsides of the muffin cups; chill 15 minutes. Preheat oven to 350 degrees F.

Bake 8-9 Minutes. (Cookies will be puffy.) Remove from oven; gently press the center of each cookie down. Return to oven 1 minute. Cool cookies in muffin cups for 5 minutes. Remove to wire racks; cool completely.

Melt caramels and milk in a small saucepan over low heat, string frequently until smooth. Carefully spoon about  1 tablespoon caramel mixture into each cookie cup. (If you used the caramel bits just simply heat in a saucepan until melted or in the microwave for about 2 minutes. Check and stir frequently.)

While caramel is still warm, decorate with chocolate pieces and yellow sugar. Cool completely.
