Goat meat or goat's meat that is!

By Alexa Vasquez, Founder/CEO and the NOCOVFM Team and Candida Marques, Co-Owner, Marketing/Sales & Website Director October 19, 2020

We now carry goat meat in our marketplace and we are head over goaty about it!

The common name for goat meat is simply "goat", though meat from adult goats is often referred to as chevon, (French) and young goats are called capretto (Italian.), or cabrito (Spanish). In the South Asian and Caribbean cultures goat is called, mutton. We, here in the USA, prefer the French form of the name and we call goat meat chevon. Spanish and Portuguese cultures refer to the young milk-fed goat as Cabrito.

Goat is a staple and delicacy in many world cultures. Although less common in American and Canadian cultures, goat has become very popular in some niche markets throughout the country, including those that serve immigrants from Asian and African countries that prefer goat to other meats. Since 2011 the consumption of goat has risen drastically in the USA and the processing of goat has doubled every 10 years rising to almost one million annually. Goat meat can easily be found in a few upscale restaurants as well as in cities such as New York, and San Francisco.

Goat meat is savory and not as sweet as beef, some cuts can have a gamey flavor, but depending on how it is raised and prepared it can be mild and very tasty. It can be prepared in a variety of ways such as stewed, curried, baked, grilled, ground, fried. Goat meat can even be made into sausage and turned into jerky.

In some cultures, goat is served during the holidays. Southern Italians, Greek and Portuguese cultures serve roast goat for Easter. The Northern part of Portugal serve goat on Christmas day.

More people are ordering goat at restaurants. In the past several years goat meat has started appearing on menus and its consumption has increased. Since goat is growing in popularity in the restaurant world, it is now starting to appear on menus and in dishes that are approachable like “goat meatloaf,” “grilled goat steaks,” even in sandwiches. People are more likely to try a new food if it is presented in a method of preparation that they are already familiar with, like burgers, grilled steaks; ground and used in sauces with pasta and so on.

If you look in your local supermarket you will not find goat processed by Tyson or Perdue, is simply does not exist. Goat herds are not raised on factory farms. Goat meat is gaining popularity one farmers market at a time, and we, here, at NOCO Virtual Farmers Market are doing just that bringing goat to your doorstep!

Our new vendor Lazy S Ranch in Nunn, Colorado raises and slaughters their goats ethically and humanely and this is a good thing and serves us well in flavor too.
